A massive thank you to everyone who filled out our recent feedback form. Your ratings were incredibly high across the board, and it was so reassuring to see how much you enjoy the space. Lots of 9s, lots of 10s, and lots of happy dances from our side of the screen.
We also loved reading your suggestions. Every comment matters, and we are taking the time to go through them properly. We are already mapping out what we can action right now and what needs a little more planning, but all of them are being considered.
Thanks for helping shape Mâché. We are lucky to have such an engaged and thoughtful community with great ideas that are guiding us as we keep improving the space.

Housed in the old Bartolo space on Crown Street, the bar features over 150 wines starting from $15, a snacky food menu and even beers from small Australian breweries. Turns out our good friend Jim from GlasgowHart just couldn’t stay away and came back to Mâché a few months ago. Did he really miss us, or is our coffee just that good? Either way, we’ll take the compliment 💜
Jim has been shaping workspaces for 23 years, helping businesses design, plan and build environments that truly support how people work. GlasgowHart handles everything from interior design and consultancy to full fitout management.
On top of all that, Jim brings incredible energy, a killer sense of humour, and a genuine willingness to help anyone around him. He lifts the community just by being here. We are so happy to have him at Mâché!
What’s the best thing about Mâché?
I think most people say this: it is the community. I can have a laugh with just about everyone here. It makes me feel like I am part of something bigger.
Any must-read books or must-watch movies?
I am a big fan of the author David Mitchell (not the comedian), with books like Ghostwritten, Cloud Atlas, The Thousand Autumns of Jacob De Zoet, The Bone Clocks, and Slade House. I also like the Rivers of London series by Ben Aaronovitch.
I just finished streaming “Shrinking” on Apple TV and loved it. I also love Ted Lasso and Slow Horses. I like Science Fiction movies a lot.
Favourite holiday spot?
Anywhere I can switch off. So somewhere without mobile and internet connections! I loved Vietnam when I went there, and would always go back to Japan.
Go-to comfort food?
My wife’s slow cooked beef (in red wine and tomatoes) with mashed sweet potatoes.
One thing you absolutely can’t live without?
Gluten free beer.
Favourite band, DJ, or solo artist?
Wow, hard one! I love live music. Tightest band I ever saw was the Buzzcocks (in Singapore, of all places). Second tightest was Parquet Courts. I loved seeing L7 when they came out a couple of years ago. Have been getting into Sam Fender as well.
Perfect day out in Adelaide?
I have a soft spot for Port Willunga. I went there every summer as a kid. If I could choose, it would be a day on the beach there and dinner at the Salopian Inn or Mount Lofty Vineyards restaurant afterwards.
Mâché Eats | Ultimate Pasta Bake
If you’re after a cosy, high-protein meal that’s plant-based, meal-prep friendly, and seriously delicious, this Ultimate Pasta Bake is about to be your new go-to. It’s loaded with whole-food goodness, packed with veggies, and layered with creamy tofu ricotta and a silky bean-based cheese sauce that tastes way more indulgent than it actually is. YUM!

Ingredients:
1 box @barillaaus Red Lentil Pasta
@acaciablends Shroomin' Sprinkle (optional)
CHEESE SAUCE
400g cannellini beans, drained (1 tin)
1/2 cup nutritional yeast
1 tbsp lemon juice
1 cup soy milk
RAGU
150g eggplant, diced
100g zucchini, diced
100g mushrooms, diced
500ml tomato passata
1/4 tsp dried oregano
1 onion, diced
Salt and pepper
TOFU RICOTTA
250g firm tofu
1 tbsp lemon juice
1/4 cup nutritional yeast
6 fresh basil leaves, torn
Steps to deliciousness:
CHEESE SAUCE
• Blend all ingredients in a high-speed blender until smooth and creamy.
RAGU
• In a large pan over medium heat, sauté the onions until translucent.
• Add remaining diced vegetables until they sweat, followed by the tomato passata.
• Reduce heat, cook on low for 15 minutes, or until veggies are just soft (but not too mushy).
PASTA
• Cook the red lentil pasta until al dente.
• Once cooked and drained, add to the ragu sauce and mix to combine.
TOFU RICOTTA
• In a food processor, pulse the tofu and basil until it resembles ricotta. Alternatively, you can crumble it with your hands in a bowl.
• Add the remaining ingredients and pulse to combine.
ASSEMBLE
• In a large baking dish, start with all the pasta/ragu as the bottom layer, pressing down firmly.
• Spread over the tofu ricotta mixture.
• Top with the cheese sauce and sprinkle liberally with Acacia Blends Shroomin' Sprinkle (optional).
• Bake in preheated oven for 45-50 minutes!
This one reheats like a dream (oven, microwave, or even in a pan). Just make sure to cover it, warm it gently, and add a splash of water if it’s looking a little dry.

Business | Drinks startup HOPR overcomes the ‘near impossible’ to raise $3m amid effervescent growth
Non-alcoholic beverage company HOPR has overcome the “near impossible” by closing a capital raise of more than $3 million in the largest funding round for an Australian beverage company this year.
HOPR, which was founded by Jose Ramirez in 2020 during the height of pandemic lockdowns, has been backed by international groups, professional athletes, finance professionals and long-time fans who have followed the brand since inception. Among supporters of the capital raise are cornerstone investor John Bromley, a high-profile New Zealand consumer goods executive, Sue Read, a former Matildas goalkeeper, and Chris Titley, a former Morgans broker and host of the Scoreboard podcast.

MusicSA’s annual celebration of live, local music has returned across November, uniting South Australia’s vibrant music scene under one epic, state-wide program.
Our pick? The 10-year celebration of Music in the Square in the Southeast Quadrant of Mukata/Hindmarsh Square, with food and drink options from Staazi & Co, Le Pas Sage and The Griffins, and live performances from George Alice, Praise Mangen & Nat Luna.
Sustainability | Coles & Planet Ark Sustainable Schools Competition 2025 winners announced
Once again, the Coles and Planet Ark Sustainable Schools Competition has awarded 20 Aussie schools $5,000 each, giving students the chance to turn innovative sustainability ideas into action. Schools proposing initiatives with the greatest environmental impact were considered and judged by a panel of sustainability experts and educators, and there was a huge range of exceptional projects to choose from!
In South Australia, the students at Rapid Bay Primary School (pictured) will be revitalising the Yattagolinga Creek and the surrounding catchment by planting natives, managing weeds, and regulating water flow. These measures will aim to restore health and resilience of the creek ecosystem, creating habitats for native birds, insects and aquatic species.
