Tasting Australia is back | Our member Banjo is pouring the drinks!

South Australia’s biggest food and drink festival is back, bringing together top chefs, winemakers, and flavour-makers from across Australia and around the globe. At the heart of it all: a buzzing city hub with free live music, mouth-watering food vendors, and an epic festival bar.

And guess what? Mâché member Banjo Harris Plane and his wife, Meira, are the duo behind the entire beverage curation.

Born in Adelaide and twice named Australia’s best sommelier, Banjo brings serious wine cred, from managing Melbourne’s world-renowned Attica to co-founding the award-winning wine delivery service Good Pair Days. He’s also opened acclaimed venues like Bar Liberty and Capitano, judged national wine awards, and chaired the Hot 100 Wines.

So, if there’s a glass in your hand at Tasting Australia, Banjo and Meira had a say in what’s inside of it 🍷

Mâché Eats | PanWraps (GF/VG)

Looking for a quick, budget-friendly lunch idea that actually holds your wrap fillings without falling apart? We’ve been loving these PanWraps, they’ve got a pancake-like texture but work perfectly as a savoury wrap. Super simple, super tasty, and ideal for busy workdays.

Ingredients

40g buckwheat flour

10g unflavoured Pure Plant Protein

1/4 tsp baking powder

1/4 tsp sea salt

1/4 tsp herbs or spices

1 tbsp apple cider vinegar

1/2 cup cold soda water (or plain water)

Instructions

1. Mix all the dry ingredients in a bowl.

2. Add the wet ingredients and whisk until smooth. You’re aiming for a thick pancake consistency. Add more liquid if needed.

3. Heat a non-stick pan over low-medium heat and lightly oil if needed.

4. Pour the batter in and gently spread it out to the edges. Cover with a lid if you like (not essential), and cook until the edges pull away and the base firms up.

5. Flip gently, turn the heat up a little, and cook until golden and crisp. For extra crispiness, add a touch more oil before flipping.

6. Remove from the pan, fill with your favourites, wrap it up, and enjoy!

We reckon once you try these, they’ll be on repeat. Big thanks to our member Sarah for sharing this great recipe with us 👩‍🍳

End Food Waste Australia - The Australian Food Pact, SA

The Australian Food Pact is a collaborative initiative that brings businesses together to address food waste across the supply chain. Coordinated by End Food Waste Australia, the Pact supports companies in taking voluntary action, setting measurable goals, and working collectively to reduce waste while achieving positive economic, social, and environmental outcomes.

By fostering partnerships across growers, manufacturers, retailers, and other key sectors, the Pact promotes a whole-of-chain approach that ensures waste is prevented rather than shifted. Its strong network of government agencies, NGOs, and global partners underpins its success, while tailored support and knowledge sharing empower businesses to implement effective solutions.

Celebrated internationally as a model for change, the Australian Food Pact is reshaping Australia’s relationship with food and driving systemic change for a more sustainable future.

Local |  Easter Bilbies in SA Thriving in Record Numbers

In a heartwarming win for Aussie wildlife, Easter Bilbies are thriving in record numbers, thanks to dedicated conservation efforts across Australia.

These long-eared natives have been making a quiet comeback, particularly in predator-free zones like Arid Recovery in SA, where numbers are at their highest since monitoring began.

Once teetering on the edge, bilbies are now showing us what’s possible when community, science, and a little bit of Easter magic come together.

Sustainability | Turning Surfboard Waste into Sustainable Housing

Eight years ago, Hawaii Off Grid architect David Sellers noticed that the skip bins near his workplace were brimming with surfboard foam offcuts from local shapers that were destined for landfill. Realising this waste had potential for something greater, Sellers came up with the idea of using them to build homes.

Now, the first house made entirely from “surf blocks” is nearly complete, and Hawaii Off Grid hopes it will set a new benchmark for eco-friendly building practices. The firm takes discarded foam offcuts created during the surfboard shaping process, combines this with waste polystyrene, and transforms the materials into insulated composite concrete forms (ICCFs) for construction.

A bold idea born from beachside bins, now reshaping the future of sustainable living, one surfboard at a time.
