Monthly Walk - Happening Today!
Today is the second Wednesday of April, which means we get to stretch our legs and go for our monthly stroll! Meet us at 10 am for a morning walk in the parklands near Mâché.
Bring your furry friends and enjoy some fresh air and good chat, followed by coffee at a cosy nearby café. Everyone's welcome, dog owners and non-dog owners alike 🐕

Member Feature | Thanh Nguyen
In this edition of our newsletter, we're pleased to feature one of our newest members, Thanh Nguyen, highlighting the diverse talent within the Mâché community.
Thanh serves as the Marketing Manager at SkyCiv, a structural engineering software company. In this role, Thanh oversees a wide range of marketing functions, including branding, advertising, go-to-market strategies, and customer retention, often taking on multiple responsibilities, as is common in a bootstrapped team.
Outside of work, Thanh enjoys traveling and pursuing new skills through workshops and courses. Recent experiences include a Vietnamese cuisine-inspired cocktail workshop and an attempt at shooting sports. Currently, Tanh is exploring videomaking for both personal and professional development.
It's great having such multifaceted and engaged members like Thanh in the Mâché community. Scroll down to learn more about her!
What’s the best thing about Mâché?
"It gets me out of the house and lets me meet new people. :)"
Any must-read books or must-watch movies?
"This is hard. For non-fiction, Factfulness. I'm reading A Gentleman in Moscow at the moment and would also recommend it. As for movies, if we're talking classics, Before Trilogy if you're in the mood for something comforting."
Favourite holiday spot?
"Denmark. I lived there for a bit so I might be biased. It’s a beautiful country with cool people and many things to do and see."
Go-to comfort food?
"Any Vietnamese noodle soup dish."
One thing you absolutely can’t live without?
"My family and friends."
Favourite band, DJ, or solo artist?
"I'm a fan of the Korean rock band Jaurim."
Perfect day out in Adelaide?
"Take a walk along Henley Beach, then stop by Bacchus for a cool drink while enjoying the beach view on a warm sunny day."

Blessing your tastebuds with another edition of Mâché Eats, our exciting new newsletter section where we’ll share delicious recipes each month to help you become a foodie just like us!
This month's flavourful feature: Tofu + Mushroom Cabbage Rolls. Packed with healthy ingredients and flavour, these will definitely be a hit. A big thanks to Sarah (the mastermind behind this recipe) for sharing her wisdom with us. Enjoy
Tofu + Mushroom Cabbage Rolls
Ingredients:
175g firm tofu, crumbled
150g mushroom, diced
20g carrot, grated
1 spring onion, sliced
1-2 cloves garlic, minced
Thumb of ginger, minced
1 tsp rice wine vinegar
2 tsp soy sauce
200g (2-3) cabbage leaves
To serve:
Coriander
Sweet chilli sauce
Lime juice
Instructions:
In a pot of boiling water, cook your whole cabbage leaves until they’re al dente (just cooked). Drain and put aside.
In a pan over medium heat, add your mushrooms, tofu, carrot, spring onion, garlic and ginger, and sauté until soft and the mushrooms are cooked - adding a little water if needed to stop your mixture from sticking (or you can use a splash of coconut/sesame oil).
Turn the heat up and then add your rice wine vinegar and soy sauce, along with a tsp water if your pan is too dry. Season with S&P to taste. Once the vinegar smell has gone, take off the heat and stir in some chopped coriander (optional).
Add the mixture to your cabbage leaves and roll them up as tight as possible without tearing the leaves.
You can either eat them straight away, OR I like to cook them again so the cabbage is nice and soft.
Add a small amount of water to a fry pan and bring it to the boil. Sit your cabbage rolls in the water and simmer with a lid on until cooked to your liking.
Serve in a bowl with any remaining broth from your pan, and top with sweet chilli sauce, fresh lime juice and coriander.

Business | AIM Grants Now Open
Assess-Implement-Monitor (AIM) grants help cover the cost of expert advice to assess a business’s environmental performance and provide recommendations and a business case for making operations more sustainable and circular.
Funding is available for businesses and not-for-profits to: assess materials circularity, waste management and resource efficiency, and/or scope 3 emissions and carbon reduction strategies implement recommendations made through an AIM grant-funded, independent and impartial assessment monitor progress and report on outcomes for continuous improvement.
Applications close 16 May 2025.
Food & Drink | Elliniko - New Greek Eatery on Unley Road
Elliniko Eatery, a new Greek restaurant with a "small shop, big flavour" ethos, is set to open on Unley Road in early April, founded by Ioannis Patrios and Anthony Savas who aim to bring authentic Greek hospitality and cuisine to Malvern. Inspired by their recent travels to Greece, particularly the Dodecanese Islands near Turkey, the eatery will feature a rustic yet elegant interior with Venetian plastering and offer traditional Greek dishes, with a focus on high-quality, farm-sourced meats.
A key menu item will be yiros, prepared traditionally with chips but without lettuce, and the location in a complex with accessible parking was a significant factor for the owners wanting to attract customers from across Adelaide.

Local | Social Housing Tower Proposed for Whitmore Square
Plans have been submitted for a 14-storey social housing development on Hocking Place, overlooking Whitmore Square, featuring 36 apartments designed by tectvs, with a mix of one and two-bedroom units and communal facilities.
The proposed tower, exceeding local height limits but committed to a high green rating as an all-electric, gas-free building with rooftop solar panels, will replace an existing single-storey dwelling next to affordable eco-housing. In related news, a 16-storey high-end apartment tower on Gouger Street, containing 107 units, has received approval from the State Commission Assessment Panel, necessitating the demolition of three existing low-rise buildings.

Wellbeing | Parklands Loop Collective
Walk, run or ride a loop around Adelaide completely through Park Lands A lap around the city is about 16km - a perfect distance for a good spring walk.
But pick your own adventure: add in North Adelaide for a longer route; just do a few kilometres; cycle several laps; jog with a pram... the how and how far is up to you!

Sustainability | Grassroots Grants
Green Adelaide has launched its Grassroots Grants program, offering over $1 million in funding for individuals and community groups within Adelaide's 17 metro council areas to undertake environmental projects.
These grants, ranging from $2,000 to $200,000, aim to support initiatives that create a cooler, greener, and wilder Adelaide by boosting biodiversity, increasing green spaces, and conserving the coastline and water resources.
To assist potential applicants, Green Adelaide is also hosting planning and design workshops in addition to their grant writing workshop, with applications closing at 5 pm on May 7, 2025. Successful projects will join the 207 already contributing to a more sustainable metropolitan Adelaide.
