Mâché Highlight | Paddy Black Takes Inna Protein to the World

Mâché member and Inna Protein co-founder Paddy Black just got back from a big week in Bangkok at ThaiFEX, one of the world's largest food expos, with over 100,000 attendees and 3,900+ booths showcasing the future of food.

Paddy and his business partner, Myles Sicuro, spent a week meeting importers, distributors and retailers across Thailand and Southeast Asia, and made some great connections with reps from Austrade and DFAT. Southeast Asia is a fast-moving market, and it sounds like there are some exciting export deals potentially in the pipeline.

We love seeing our members out and about, making it happen on the world stage! Big congrats to Paddy and the Inna Protein team


Member Feature | Shaana Sihota

Say hi to Shaana, the newest member of the Mâché community!

Shaana is a Facilitator at batyr, a not-for-profit focused on preventative mental health for young people. She's joining fellow batyr member Nunzio (whom you got to meet in our last newsletter) on a part-time basis, bringing a mix of skills to the space: she's a Psychology Honours student at Adelaide Uni and has a Diploma in Languages (French) from UniSA.

When she's not working or studying, you'll find her watching netball and footy, catching live music, or hanging out with her two dogs.

Mâché Recommends | Winter Solstice at House of Plenty

This winter solstice, something a little different is happening down at Currency Creek. Solstice 2026: Strange Strains is a one-day celebration of weird ferments, natural wine, live fire food and dark winter energy at Home of Plenty, running Sunday 21 June from 11 am to 8:30 pm.

South American asado, live music, local producers and six included tastings from the region's best are part of the lineup for the day.

And one of our very own members will be there too! Sarah from Acacia Blends will be there on the day. If you're looking for something special to do on the shortest day of the year, this one's worth the drive.

Mâché Eats | Blueberry Almond Chai Crumble

Winter comfort food, sorted! This blueberry crumble gets a little something extra from Acacia Blends Reishi Vanilla Chai, which brings a warm, earthy spice to the oat and almond topping.

Here's how to make it. ⬇️

 

Ingredients (Serves 6-8)

Filling

  • 900g blueberries (5 cups), fresh or frozen (defrosted)

  • 1/2 cup maple syrup

  • 3 tbsp cornstarch

  • 1/2 tsp lemon zest

  • 2 tbsp lemon juice

  • 1/4 tsp cinnamon

Crumble

  • 1 cup rolled oats

  • 1/2 cup packed almond meal/flour

  • 1/2 cup almonds, chopped/sliced

  • 1/2 cup coconut sugar (or brown)

  • 1/2 tsp sea salt

  • 4 tbsp coconut oil, melted

  • 3 tbsp coconut yoghurt

  • 1 tbsp Acacia Blends Reishi Vanilla Chai

Instructions

1.- Preheat the oven to 170 °C. In a baking dish, mix the blueberries, maple syrup, cornstarch, lemon zest, lemon juice and cinnamon.

2.- In a bowl, mix the oats, almond meal/flour, sliced almonds, coconut sugar, chai blend and salt. Add the coconut oil and yoghurt and stir together until all the flour is incorporated and the mixture is moistened throughout.

3.- Drop spoonfuls of the oat mix over the filling, using your fingers to break up the mixture until it is evenly distributed (no need to pack it down).

4.- Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden. Remove and let it rest for 5 to 10 minutes before serving. Serve with extra coconut yoghurt, or vanilla ice cream (I insist!).
